Dan's Chili Recipe

This recipe is from my ex ... maybe just in time for one of those last winter meals before spring provides us with a bounty of freshness.




Chili Ingredients:
Chili Seasoning Mix (recipe to follow)
1 lb. ground beef (your choice, but medium adds great flavour)
1 large white onion, chopped
1 rib celery, chopped
1 bell pepper, chopped
5 cloves garlic, minced
Tomato Paste
Beer (your choice, but something simple)
1 1/2 cups Beef/Vegetable Stock
1 1/2 cups tomato sauce
Worcestershire Sauce
Hot Sauce (your choice, Tabasco is a good bet)
1 cup canned white beans
1 tsp cocoa powder
1 Tbsp ketchup
Liquid smoke
Garnishes (sour cream, sliced green onions, shredded cheese)


Chili Seasoning Mix:
This recipe obviously prepares enough for more than one recipe, but why not make it once for a few uses, rather than have to make it each time?!

1 Tbsp ground chiles (we usually have a jar of mixed dried chiles on hand - chipotle, ancho, passila)
1 Tbsp garlic powder
1 Tbsp oregano
1 Tbsp salt
1 heaping Tbsp chili powder
4 tsp cumin
1 tsp cayenne
1 tsp celery salt
1 tsp black pepper


RECIPE:
Brown beef in some olive oil and butter (yes, I know, I didn't list these as an ingredient, but I assume these are basic items in everyone's pantry, including salt and pepper).

Add onion, celery, bell pepper, garlic.  Cook until softened.

Add 1 "big" Tbsp tomato paste, cook 1-2 minutes.

Add 2 Tbsp chili seasoning mix.  Cook a few minutes.  When a rich brown colour, deglaze with half a bottle of beer (I think you know what to do with the other half).  Cook away liquid.

Add stock, tomato sauce, a squirt of Worcestershire, and a few dashes hot sauce (to your liking).  Simmer 45-60 minutes, partially covered.

Add beans, cocoa powder, ketchup, liquid smoke and season with S&P to your taste.  Simmer 20 minutes.

Serve with your choice of garnishes.  I have no idea how many servings this makes!!  Believe it or not, this also works with veggie ground round, but obviously no browning is required.
